Flank Steak Salad on Naan Bread
3 oz. cooked flank steak seasoned simply with salt, pepper and granulated garlic
1/4 10 inch English cucumber sliced
1/4 medium sized tomato sliced
1 serving of salad greens
1 green onion sliced on bias
1/2 oz. blue cheese crumbles
1/4 piece of Garlic Naan (I used Stonefire Naan which = about 95 calories for 1/4) warmed in oven.
1 TBL Italian salad dressing
Broil a flank steak 6 inches from the flame until desired doneness. I did mine medium and it took about 4 minutes per side for a 1 /14 pound flank steak. Set aside to rest.
Wash and allow salad greens to dry.
To assemble, place 1/4 piece of Naan on a plate. Top bread with salad, tomato slices, cucumber slices and sprinkle with green onions. Dress salad lightly with 1 TBL Italian dressing before topping with 3 oz. of thinly sliced flank steak and 1/2 ounce of blue cheese crumbles.

This is a fresh, delicious and easy summer dinner. I served it with a few steamed asparagus spears. You can skip the Naan but, it’s a delicious treat 🙂
